This Father’s Day, show your dad how much you care by preparing this delicious plant-based dish for him.

FATHER’S DAY GUAVA CRUMBLE

TIME NEEDED: 1 HOUR

SERVES 4-6

INGREDIENTS:

For the FILLING:

2-3 large guavas

4 tbsp brown sugar

1 tsp rind of key lime (limau nipis)

1 1/2 tbsp key lime juice

1 tsp cinnamon powder

1/4 tsp ginger powder OR 1/2 tsp freshly grated ginger

1 1/2 tsp arrowroot powder

1 1/2 tbsp raisins (optional)

1/3 cup water

For the CRUMBLE TOPPING:

1 1/2 cups rolled oats

1/2 cup plain flour

1/2 cup brown sugar

1/2 cup virgin coconut oil

1/2 tsp salt

METHOD:

- Preheat the oven to 180 degrees celsius.

- Cut guavas in half and remove seeds from the halves using the back of a metal spoon. Then dice halves into smaller bite-size cubes.

- In a medium-sized baking pan (an 8 x 8-inch baking pan will do), pour in guavas and stir in other filling ingredients. Set aside.

- In a separate bowl, stir crumble topping ingredients until it becomes an evenly distributed mixture.

- Pour crumble mixture over guava filling in an even layer.

- Place the pan into the oven and bake for 30 minutes, flipping the pan at the 15-minute mark to encourage even baking.

- Remove the pan from the oven and allow to cool for 10 minutes before serving with an optional scoop of plant-based vanilla ice cream.
